Coconut Chia Custard (Make 4 Serves)
- 70 Grams Chia Seeds
- 230 mls water
- 20 mls of Coconut Probiotic concentrate
Combine the above in a large 1 litre bowl or jug, stir well and set aside.
Place 250 Mls of Coconut Milk in a saucepan and heat to simmer
Add the following ingredients to the warmed Coconut Milk and whisk through for 2 minutes over low heat until the mixture thickens slightly to form custard and coats the back of a spoon.
- 2 Organic Free Range Eggs
- 1 Tablespoon coconut oil
- 1 teaspoon vanilla
- 1 Teaspoon cinnamon
- 1 pinch Himalayan Salt
Pour this mixture into the Chia Mixture and stir well. Taste and if you feel you need a little more sweetness and coconut flavour add a little more coconut probiotic.
Pour the mixture into four glasses/bowls/jars and top with Coconut Yogurt (I personally love Co Yo)
Add Fruit & Chopped Walnuts to serve.
A drizzle of Maple syrup over the top for those who love things a little sweet
When made in advance in Jars these are a great grab and go breakfast or great as a desert.
